Modified starch Alimentamyl AC (E1414 - hot) is characterized by high resistance to heat treatment, mechanical agitation and acidic environments.
The product retains its viscosity even during prolonged boiling or sterilization.
Provides a smooth and creamy consistency, preventing water separation (syneresis) and the formation of lumps.
- Sauces and ketchup: To achieve a dense structure that does not fall apart when heated.
- Meat products: Used as a binder in sausages, sausages and pâtés to improve juiciness and retain moisture.
- Dairy products: In fruit milks, creams and puddings for a stable texture.
- Canned food: Prevents juice leakage and maintains the integrity of canned products.
Requires heating to activate its thickening ability (gelatinization). It is usually added to the water phase or directly into the mixture before heat treatment.
