Description
Glucose oxidase (GOD) is an enzyme that oxidizes glucose to hydrogen peroxide and gluconolactone. It is mainly used in medical diagnostic tests (glucometers) for measuring sugar, in the food industry as a preservative and as a food additive to maintain blood sugar levels.
It acts as an antioxidant and antimicrobial agent to extend the shelf life of products.
Dosage: 0.5-3 g/ 100 kg flour (5-30 ppm)
