Citric acid monohydrate (E330) is a white crystalline substance widely used as a natural preservative, antioxidant and acidity regulator in the food industry. It provides a characteristic sour taste, is soluble in water and is obtained mainly by fermentation of sugars.
It is found in soft drinks, jams, jellies, preserves, confectionery and as a cleaning agent.
