Recipe:

2,600 kg of wheat flour

1 kg Malz Plus mix

0.400 kg of rye flour

0.100 kg of yeast

0.080 kg of salt

about 2,550 kg of water

Kneading: 4 min at slow speed + 5 min at fast speed

Dough temperature: 26-28 degrees

Dough rest: 10-25 min

Break after splitting: 8-10 min

Fermentation: 50-60 min at 35-37 degrees and 75% moisture

Baking temperature: 240-210 degrees

Baking time: 40 min

Weight: 0.600 kg
